● ANDY GARCIA – “In New York there are so many great restaurants. There’s an old one I’ve gone here for many years that I like to visit, just out of nostalgia. It’s a very good restaurant. It’s called Il Vagabondo. It has a bocce court in it. It’s just a very picturesque place; very, good food. Cipriani’s. There’s a new one called Nino’s. Scalinatella — a lot of Italian restaurants, you can tell. I always pop my head into Victor’s Cafe. And then, I’ve got to have a Gray’s Papaya hot dog here.” Any plans to visit Cuba? “Oh, I dream about visiting Cuba every day. But some people have to leave there first.” ● HUGH JACKMAN – “I’m a real junkie for Jean-Georges Vongerichten. I love his cooking. I just went to his place up in The Mark, and I was lucky enough to go to his new restaurant down at ABC Carpet and Home — all organic, every ingredient’s within an 100-mile radius. The food is just unbelievable there, so … Any special dish? Chicken. He told me his secret: brine. You got to brine your chicken.” ● VERA WANG –“I like Morimoto, and I like Bar Masa, and I love the new Mark Hotel, and Sant Ambroeus, uptown and downtown, Mr. Chow’s. I go out to eat a lot — you can tell.”

● SANDRA BERNHARD – “I love Cookshop, which is downtown. I love BLT Fish, one of my favorite restaurants. Babbo. Of course, I love 2nd Avenue Deli. I’m very into trying to eat locally, sustainably grown food. I’m doing more and more cooking at home because of my daughter. And I’ve always eaten very balanced and healthy, but, to me, it’s about really preserving the environment, as well.” ● ZOE KRAVITZ –Five Leaves in Brooklyn, in Greenpoint. Delicious.” ● PARKER POSEY – “I’m trying to give a good recommendation for something. Mary’s Fish Camp.” ● DOMINIK GARCIA-LORIDO – “Oh, wow! I’m, like, so not a club person anymore. I’m pretty much a homebody. I live in L.A., so … I like more dive bars and chill spots where you can hear good music. I don’t like really sceney places. I don’t like where you have to dress up. I’m more, have a beer and chill; watch a game. I have to give a shout-out to the guy I work for, as a waitress. I still work there. It’s a lounge in Studio City, California, called Next Door Tapas. It’s attached to an Italian restaurant, La Loggia. It’s a really chill, tapas bar in the Valley. It’s got good drinks and good food.” ● STEVEN STRAIT –The Smile on Bond Street — really, really cool place; a little coffee shop that’s got great food, great coffee; really relaxed, cool place. I grew up here, but I don’t live here anymore. I love staying at the Chelsea Hotel. It’s got so much character; really, amazing history; inspiring place. It’s really kept to its roots. The city’s expanded around it. It’s really held firm. I appreciate that.” ● RESHMA SHETTY – “My favorite restaurant, at the moment, is Jack’s Luxury Oyster Bar. I love that place. Bar-wise, the Russian Vodka Room does a mean apple martini. And they have a fabulous happy hour: $5, 4-6.” ● GRAHAM PHILLIPS – “One thing that’s been fun is that I’ve noticed is that all the best pizzerias are in Brooklyn, and I used to never really go to Brooklyn, but now that the show [The Good Wife] films in Brooklyn, I’ve been going to all these pizzerias. I have a list on my phone. Someone sent it to me. I’ve just been trying to check ’em all off my list. Joe’s Pizza, Bleecker and Carmine, unbelievable! Di Fara, Brooklyn, Avenue J — I tried that. That was unbelievable! I also tried Grimaldi’s. And they were all unbelievable. They’re all in the same genre of this authentic New York pizza, but they all have their little twist to it.”

Where Celebs Go Out: Penelope Cruz, Katie Couric, Gabrielle Union

At the New York Film Festival premiere of Broken Embraces:

● PENELOPE CRUZ – Favorite restaurant in New York? “Oh, I have many because I love food so much!” And in Madrid? “I go to many that are out in the countryside, but whoever goes there for the first time should go to Botin. It’s the oldest restaurant in the world.” What did you like about it? “Everything!”

● PEDRO ALMODOVAR – Favorite restaurant in New York? “Mr. Chow’s — we had dinner there the other day, and it was really very impressive.” And in Madrid? “In Madrid, there are many. Casa Lucio is one of my favorites.”

● LAUREN BACALL – Favorite restaurant in New York? “Oh, please, don’t ask me about that! I’m going to see a movie!”

● ANDREA ILLY – Favorite restaurant in New York? “Here we have many good restaurants: Le Bernardin, Le Cirque, these kind.” And in Rome? “In Rome, we also have many restaurants, like Lapergola — these kind of beautiful restaurants — or the Hotel de Russie, a beautiful place as well.”

At the Library of American Broadcasting’s Giants of Broadcasting Awards:

● KATIE COURIC – “I don’t really spend a lot of time hanging out in bars [laughs], which I think is a good thing. But I like BLT Steak because I’m a big carnivore. I like this really, beautiful restaurant outside Washington called L’auberge Chez Francois, where I took my parents on their anniversary. I love Joe’s Stone Crab in Miami. Those are three good ones.”

● KEN BURNS – “Well, I like Burdick’s Restaurant in Walpole, New Hampshire. It’s been around since 2001. It is a small, little village in New Hampshire, but people quite often drive from New York or Boston. That’s four or three hours to have a meal there. The fact that I am a silent partner in it is part of full disclosure. I live in Walpole, New Hampshire; I travel a great deal, and I basically don’t cook anymore. I’ll eat every meal I can in this restaurant. It’s a broad mix of Continental cuisine done in a very informal and really charming atmosphere, and I don’t know anybody who has been there that hasn’t just fallen in love with it. The proprietor, the man whose genius it is, is Larry Burdick, the well-known chocolatier with a boutique chocolate business. He used to work here, as a dessert chef for many fine restaurants, and moved to our little village 15 years ago to manufacture his chocolates, which are second to none. But he and I had always complained that what we needed was a good restaurant, and we were able to do that.” What about in New York? “I like Bar Pitti on 6th Avenue between Bleecker and Houston. It’s next to Da Silvano, which gets a lot of attention. Bar Pitti is just quite simply the best Tuscan cuisine in the United States. It’s simple. Everyone who goes there knows about it. You can’t get a better side dish of spinach. The tagliata is amazing. Every dish — I’ve never had a bum dish there. And it’s sort of our go-to place. We bring the kids; we go late; we go early. I’ve been doing it for 20 years.

At the New York Film Festival premiere of Capitalism: A Love Story:

● MICHAEL MOORE – What are some of your favorite restaurants or bars? “[Laughs] I don’t do commercials!”

● MORGAN SPURLOCK – “I love La Esquina ’cause it’s right next to my office. It’s this incredible restaurant, right on Kenmare and Centre Street and Lafayette. Amazing food, fantastic. I love Balthazar. I probably have lunch there once a week because my office is also very close to there. Puck Fair is probably my favorite bar in New York City — Irish bar. I love Puck Fair. I love just the energy. It’s probably the best pint in New York City. Yeah, it’s a great energy, great vibe.”

● LISA LING – “My favorite place these days in L.A., which is where I live, is a place called Baby Blues Barbecue. It’s Southern-style barbecue, and it is comfort food. And over the last few months, I had been needing a lot of comfort, so it was a perfect kind of place to feed that desire and that craving.”

At the Sophie’s Voice benefit for spina bifida research:

● COUNTESS LUANN DE LESSEPS – “I was just at Jean Georges on Central Park West, which I haven’t been to in a long time, and it was so nice ’cause we got to sit outside and the weather’s still nice … so that’s one of my favorite places in New York. In Milan, Sant Ambroeus. They come from Milan, and they have a place in New York and Southampton.”

● GABRIELLE UNION – “Let’s start with Miami! They have this new place called Eight Ounce Burger that I love; love Il Gabbiano on the water, off of Biscayne; love the spa at the Mandarin. In L.A., there’s this place called Happy Foot on Ventura that gives, like, the most amazing foot and body rubs, but you’re fully clothed. It’s kind of awesome.”

Polo & Evian in the Hamptons

Last Sunday, celebs, chefs, and polo players including Katie Lee Joel, Beth Ostrosky, Hugh Grant, Michael Chow, and Nacho Figueras celebrated Labor Day weekend at “A Taste of Polo by Evian” in the Hamptons at Water Mill. The private event, which took place at Michael Borrico’s magnificent estate, featured cuisine from some of the most renowned restaurants and hotspots including Mr. Chow’s, the Four Seasons restaurant, Bagatelle, and Surf Lodge. Guests also enjoyed a polo match featuring some of the Hamptons’ hottest stars, followed by an Argentine barbecue. Hit the jump for more pics.

Industry Insiders: Comedy Queen Caroline Hirsch

Laugh Legend Caroline Hirsch of the eponymous Caroline’s on bringing the funny, luring tourists, and laughing off a recession.

Point of Origin: I was born in Brooklyn and moved to Manhattan when I was, I think, 24 years old and went to City College and FIT, which is how I ended up in retail. I was working at Gimbels, which was going out of business, so as market reps, we were out, too. Because I was collecting unemployment, I had a little time to look around. Then I kind of fell into this business, the business of comedy — it just happened. Bob Stigley just loved to go to a comedy club called Freddy’s on 49th Street, and before long, he and a couple of other friends wanted to open a cabaret. Bob decided to use a woman’s name for the cabaret we planned to open in Chelsea, and that was the start of Caroline’s.

As a buyer, you had to know what people wanted to buy, and it was the same with talent. We went for the best talent we could afford. Mark Shaman came in and played piano; there were some great stand-ups, and there was a lot of enthusiasm. But it just wasn’t happening with a young, hip crowd — and to be successful in this business, you need the 20- and 30-year-olds who go out a lot, unlike the 50- to 60-year-olds who don’t. It was the time when David Letterman had just gone on to television after Johnny Carson’s Tonight Show. He was continually introducing a slew of young comedians, so every time somebody like Jay Leno came to town to do Letterman’s, he’d say he was playing Caroline’s. So by the seat of my pants, we won. I promoted things I liked, and because we didn’t have any money for advertising, we tried marketing and publicity with newspapers and television shows. We had people come in and review our shows. Comedians would get press by talking about the club.

When in 1987 Wall Street was crashing, we opened at the Seaport in April. It was one of Wall Street’s biggest depressions, but even in a recession, people have to laugh. When the CEO of A&E came to me and wanted to do a stand-up comedy show with a New Yorker, I produced the television program, Caroline’s Comedy Hour, starting in 1989. We stayed at the Seaport for five years and then came uptown. This is the best decision I have ever made in my business career. People walk up and down the streets around Times Square, they see a poster outside, and even if they don’t know the name of the comic, they saw that person on TV, and make a reservation to come in. The television show went on until 1995.

Occupations: I miss it and am working on another show now, but, meanwhile I’m producing new artists on DVD.

Not the Web? Actually, right now, Caroline’s is a site where people come to get information about the club, but this will be relaunched as more of a content site, and I’m working with a lot of people — talents before anybody else knows they’re talents — to get the job done. We’re working on a lot of stuff.

Any non-industry projects in the works? We do our fair share of fundraisers here that I support personally. We do a stand-up fundraiser every year in honor of Madeline Kahn with her husband to raise money to fight for ovarian cancer research called “Stand up for Madeline Kahn.” Another is for the Scleroderma Research Foundation, a big fundraiser in conjunction with the New York Comedy Festival, which I also produce. We do other work for charities who find that it costs so much to rent out space in a hotel — it’s cheaper to do an event with comics and me!

Are you funny? I have a great sense of humor, but I’m not funny. But I know what’s funny. You must be funny to be on stage.

Favorite Hangs: To unwind, I go out East to my house at the beach. I look forward to that, and go out for the long weekends in the summer. I don’t go to clubs anymore. We’ve been going for 25 years, where else is there to go? For me, it was a different world before I opened Caroline’s. We went to Studio 54, Limelight, Xenon, every single night. I don’t’ miss it. We had fun then, but I don’t miss the whole scene. Now there are a whole bunch of young clubs, but you have to understand that things have changed. There is no club where, at the stroke of midnight, you have to be! When I had the club on 8th Avenue, we’d go to Limelight afterward. Or we’d go to Mr. Chow’s for dinner, then to one of the clubs.

Industry Icons: All of the icons. I just didn’t want to be any of them. I didn’t want to copy anybody else. I just wanted to do it better. We didn’t have a club like Caroline’s when we started this one. We had showcase clubs where people came to try out material before they went to Vegas or Atlantic City. Jay Leno had an hour and a half of material, so I developed the club with an opening act for him, a lead-in. The people we have here are really professionals. Bill Bellamy is coming in this weekend, and he has a polished hour-and-a-half stand-up; it’s different than the showcase clubs. The caliber of entertainer who works the club is really, really funny, and I laugh at the same joke a hundred times.

Who are some people you’re likely to be seen with? Comics like Joy Behar and Susie Essman are girlfriends of mine, and I still see Carol Leifer, who is an executive producer for CBS right now, and of course, Judy Gold. Those are pretty much my girlfriends, and they all make me laugh.

Projections: The future is a big place. Now we’re partnering with Comedy Central after five years of doing the New York Comedy Festival. It will begin to air next year in a multi-year contract with the network. We have a wonderful line-up in various venues all over New York, from the day after the election, November 5 until November 9. For instance, I met Craig Ferguson many years ago in Montreal. He really took off on The Drew Carey Show and will be performing in the New York Comedy Festival at Town Hall, as will Joel McHale. Frank Caliendo will play Carnegie Hall, as will Kat Williams. Mike Mencia’s mind will implode at Avery Fisher Hall, where Brian Regan will also play. Sarah Silverman will be at the Hammerstein Ballroom. Tracey Morgan will be “Coming Back Home” at the Apollo on November 8 — and panel discussions will be held at the Paley Center with the writers of The Daily Show and Conan O’Brien’s show. And something at the 92nd Street Y to watch will be “We Have A Winner” with Lizz Winstead, who co-created The Daily Show.

What are you doing tomorrow night? I go to restaurants where people know you, usually in the neighborhood. I leave work and go to dinner at Buddakan tonight, and tomorrow I might try to stop by a new place in the neighborhood where L’Impero used to be in Tudor City, Convivio. Although Convivio is now a no-name restaurant today, Michael White is the chef, so it won’t be no-name for long.
