Chicago Openings: Bow & Truss, Gaslight Coffeee Roasters, Kai Zan, Alain’s

For years, Metropolis and Intelligentsia coffee have been the only locally-roasted beans in town, but a few new guys—Bow & Truss and Gaslight Coffee Roasters—are creating their own caffeine buzz. In Lakeview, Phil Tadros’ Bow & Truss is all about the beans; no snacks (except for special events), no Wi-Fi, and no cushy seating. Instead, plant your backside on a bench and enjoy the roasting show in the back half of the house. 

For a fancier setting—replete with taxidermy—find your way to Logan Square for the upcoming opening of Gaslight. Coffee and cheese pairings/Smoking Goose charcuterie pairings, Euro-style breakfast boxes to-go (did someone say soft-boiled quail eggs?), and La Boulangerie baked goods are the kind of artisan Midwest goods you’ll find.

As for your dinner options, the city’s sushi options just got better with West Town’s BYOB Kai Zan churning out mind-blowing maki. Order the tasting menu and stay for the night. Or make a reservation for finer dining and seasonal American eats at the South Loop’s Alain’s.
