Sable Kitchen & Bar

Billing itself as Chicago’s first “gastrolounge,” this spot in Hotel Palomar introduces seasonal dishes to thoughtful wine and spirits menu. Result is gastropub for those who aren’t into pubs. Brick-oven flatbreads, bison short rib sliders and spicy buttermilk-fried quail. Mixology program focuses on Prohibition-era cocktails and stands tall beside 100-bottle wine selection.
